Spare ribs

I put the Smoked Berkshire Pork Rub to the test on a rack of spare ribs cooked low and slow on my offset smoker, and I was honestly blown away.I’ve been barbecuing for around 30 years and have tried a LOT of different pork rubs. I went into this cook with no expectations, and this rub completely surprised me. The flavor was outstanding, incredibly well balanced, and complemented the pork without overpowering it. It also produced beautiful color and bark on the ribs.This is legitimately one of the best pork rubs I’ve used. It has already earned a spot in my Top 5 pork rub arsenal, with a very real possibility of moving into my Top 3 as I continue testing it on different cuts of pork.As far as what I would do differently—honestly, nothing with these ribs. I was extremely happy with the results. My next step is testing it on pork butt, pork chops, and other cuts to see how versatile it is.I was genuinely and pleasantly surprised by this rub. Absolute banger, and one I’ll definitely be using again. 🔥
